Cardamom Doughnut Holes

Fresh hot doughnut holes served with cool ice cream?! There is nothing better. The doughnut holes get an extra sparkle rolled with cardamom sugar.

2 cups all purpose flour

3 tbsp. granulated sugar

1.5 tbsp. baking powder

1 teaspoon salt

4 tbsp. butter melted and cooled slightly

1/4 cup plain yogurt

1 cup milk

Oil, for frying

For cardamom sugar topping:

1 tsp. ground cardamom

1/2 cup granulated sugar

1/4 tsp. salt


Pour the oil 1" deep into a frying vessel. Turn the heat to about medium and let it heat up to 350 degrees. Mix together the ingredients for the cardamom sugar topping and set aside. While oil is heating, whisk together the flour, sugar, baking powder and salt. In a separate bowl, whisk together yogurt, milk and better. Pour the wet ingredients into the dry, stirring to make a thick batter.

When the oil has come up to temperature, use a 1 inch cookie scoop to drop balls of batter into the hot oil - dropping about 4 to 5 at one time. The doughnut holes will expand to about 1.5 inches. Fry the doughnut holes on one side for about 2 minutes, flip over and fry for another 2 minutes. The doughnuts will get to a deep brown on the outside - that's ok, but keep cooking them in the oil to ensure that the center is cooked through. Using a slotted spoon, carefully remove the doughnut holes from the oil and to a wire rack with a baking sheet underneath. Roll doughnut holes into the cardamom sugar topping and serve immediately with an ice cream of your choice.
