Our Flavors

All of our flavors are handcrafted, keeping all ingredients and spice balance in mind, highlighting the nuances of South Asian cuisine.

Each one is conceptualized by Pooja, whose passion for unique yet approachable desserts came at a young age.

Dairy 

We use local New York dairy for all of our signature flavors. Dairy, with its blank palate, is able to carry spices and flavors more robustly, creating the best end product.

 
  • Apricot Mace

    This light sherbet lets the tart apricot flavor shine, and combined with sweet and piney mace (think: nutmeg but more delicate), Apricot Mace is the summer flavor combination that you didn’t know you were craving.

  • Baklava

    This flavor is the dessert in ice cream form. Using a honey based ice cream, and homemade baklava as a mix in, this ice cream is sweet, nutty, buttery and delicious.

  • Black Forest

    A cardamom “whipped cream” base with rich, decadent streams of hot fudge, and a cherry rose ripple folded in throughout. Tastes like a birthday!

  • Butterscotch Butter Pecan

    Our rendition takes this classic flavor to new heights – fennel seeds add unexpected notes of licorice that beautifully complement the sweetness of butterscotch. For that signature crunch, we've swapped candies with buttery toasted pecans!

  • Carrot Halwa

    Carrots sautéed in ghee, and with a touch of cardamom. If you've ever had the carrot halwa dessert, you'll know exactly what to expect with this ice cream.

  • Cashew Raisin

    Black raisin ice cream studded with roasted, salted cashews.

  • Cardamom Pistachio Crumble

    Inspired by an Indian shortbread called nankhatai. A nutty, caramelized crumb topping is folded into rich cardamom ice cream. Decadent with bursts of spice and pops of pistachio that adds just enough crunch.

  • Chikoo

    Sapota ice cream with warm mace.

  • Coconut Tahini with Date Caramel

    This flavor hits all the notes: sweetness from the coconut, smokiness from the tahini and earthiness from the dates - it's a flavor fit for everyone!

  • Confetti Sweet Milk

    Here we take the milky creaminess of Sweet Milk, and add the best “sprinkles” that we know: candied fennel seeds! Each bite will be a contrast of the sweetness of fresh dairy and the minty woodsiness of a pop of fennel seed. We created this flavor to celebrate the one year anniversary of our store, but we kept it around to keep the party going!

  • Date Tamarind

    Tart, sweet and lightly spiced. The date’s rich caramel sweetness is balanced by the tang of the tamarind and rounded out with subtle spice notes of fragrant cinnamon, clove and a hint of cayenne pepper.

  • Fig on Fig

    Summer seasonal. Infusing the ice cream base with toasted fig leaves, and swirling in a dried fig jam, this flavor has as much delicious summer fig flavor as possible.

  • Ghughra

    Ghughra, little pockets of pastry filled with a nutty, milky and cardamom spiced mixture, is the ultimate Diwali treat.

  • Ginger Root

    Bright and spicy, this flavor is refreshing in the warmer months, and comforting in the winter.

  • Golden Turmeric

    An earthy flavor, accented with ginger, and a spice blend, this ice cream tastes as bright as it looks.

  • Holi Sweet Milk

    Our tried and true Sweet Milk ice cream tinted with multiple plant-based food colors, layered to create a swirly, colorful, pint to celebrate the season of color, springtime, joy and Holi!

  • Kaju Katli

    We couldn't think of a more iconic Indian sweet than kaju katli so we had to bring it to our Diwali flavor lineup.. Our version is a cashew ice cream swirled with a cashew fudge ripple and topped with a piece of housemade kaju katli (topped with its signature silver foil!).

  • Kheer

    Nutmeg and orange scented rice pudding is folded into our eggless ice cream base; our take on the classic dessert, Kheer.

  • Lemon Cardamom

    Tart lemon with floral cardamom; there has never been such a seamless, yet unexpected flavor pairing.

  • Mace Date Caramel Chocolate Chip

    A creamy ice cream packed with jammy date flavor and hints of bittersweet chocolate. Indulgence at its very best!

  • Madam Vice President

    We are celebrating Kamala Harris' glass ceiling shattering win as the first female VP of the US! We honor her East and West Indian roots by using coconut and mango - commonly used flavors from India and Jamaica - as the base of the ice cream. We then fold in jaggery candied lotus seeds as a nod to her name (kamala means lotus in Sanskrit).

  • Mayamasi Shrikhand

    Tangy and sweet frozen yogurt, flavored with honey-like saffron and studded with sliced almonds.

  • Mango & Cream

    The flavor combines the simplicity of sweet milk with a fruity, tangy and sweet mango and puree. It's almost an ice cream and sorbet in one!

  • Masala Chai

    A little sweet, and a little spicy. You will get hints of ginger, cinnamon, and black pepper in this flavor inspired by the classic tea.

  • Milk & Cookies

    Chocolate Chili cookies and Perfect Chocolate Chip cookies are folded into a milk masala ice cream that’s spiked with nutmeg, cardamom and black pepper.

  • Orange Blossom Pinenut Blondie

    In collaboration with Molly Yeh, an orange blossom flavored ice cream with pieces of Molly's pinenut blondies scattered throughout. Floral, nutty and decadent.

  • Orange Fennel

    Citrusy with an herbal, slightly licorice note from the fennel, this pairing is familiar, yet surprising, and just happens to be Pooja's favorite.

  • Peda

    Peda, a milk fudge, faintly spiced with cardamom and topped with pistachios, is a favorite at Malai. To round out the Malai Diwali lineup, we fortify our sweet milk ice cream with toasted milk powder and cardamom and then fold in roasted pistachios.

  • Pumpkin Garam Masala Crumble

    Fall seasonal. The unexpected pumpkin spice: a pumpkin ice cream with the sweet and savory spices of garam masala, with a smoky black cardamom graham cracker folded throughout.

  • Puran Poli

    A slightly smoky lentil ice cream with pieces of toasted, ghee-topped roti pieces folded in throughout. A Diwali staple!

  • Ras Malai

    Ras malai is a mainstay on dessert tables - and now, in your freezer as a limited-edition Diwali treat! To make our Ras Malai ice cream, we fold paneer into saffron spiced ice cream to bring you this classic dessert but in frozen form.

  • Red Chili Chocolate

    Using Andhra Pradesh's heirloom chilies, this is a rich chocolate ice cream, with a kick. The heat of the chili will make you want to go back in for another bite!

  • Rose with Cinnamon Roasted Almonds

    Our most popular! Sweet, floral and spiced - there is nothing that this ice cream doesn't hit. It's unlike anything you've had before, in the best possible way!

  • Saffron Pistachio

    Bold saffron ice cream base with a pistachio, white chocolate, cardamom swirl.

  • Sea Salt Vanilla

    A bit of sea salt to take away the sweet edge of vanilla; this flavor is a satisfying twist on the classic.

  • Shahi Toast

    Rich saffron-spiced ice cream with toasty, caramelized bread pieces with just a hint of cardamom studded throughout

  • Spiced Peanut Crunch

    Sweet, salty, nutty and spicy all in one! This is a rich, spiced peanut ice cream with the slightest amount of cayenne pepper. The best part: peanut chikki swirls (a brittle made with ghee and jaggery). Delicious!

  • Star Anise

    The beauty of this spice is enough to draw you in, but the subtle flavor of mild licorice will keep you coming back for more.

  • Strawberry Pie

    A star anise ice cream base with the swirl of strawberry fennel jam and a tea biscuit crust - the perfect start to the summer.

  • Sweet Corn Saffron

    Summer seasonal. Using the natural sweetness of summer corn, mellowed by the honey-like notes of saffron, this pairing is perfect for the warmer months.

  • Sweet Milk

    Think: condensed milk in ice cream form. Sweet simplicity.

  • Sweet Roti & Ghee

    Bread, sugar, and butter -- we take that and ‘Indianize’ it with ingredients like roti, jaggery, and ghee.

  • Thandai

    A nutty and fully spiced ice cream flavored with fennel seeds, almonds, cardamom, saffron and black pepper! This is perfect for the spring, but delicious all year round.

  • Toasted Nutmeg

    Fall seasonal. This flavor of this warm, inviting spice, against the milky creaminess of the base will make you feel cozy in the colder months (and will be a delicious addition to any pie!).

  • Tulsi Chocolate Chip

    This is the Malai version of the classic mint chocolate chip! Tulsi is a mix between mint and basil, with chocolate and cocoa nibs running throughout.

  • Turkish Coffee

    A robust coffee flavor, with granules for some texture, paired with cardamom. Just like the drink in ice cream form.

  • Tutti Fruity

    Pineapple ice cream with glazed blueberries, mangoes, cherries and pineapples.

Apricot Mace
