Melted Ice Cream Tea Cake

Ingredients for Cake:  

  • 1 pint ice cream melted (best with Malai’s Masala Chai)

  • 1/4 cup sugar

  • 1/2 tsp salt

  • 2 tbsp coconut oil, melted

  • 1.5 cups flour

  • 2 tsp baking powder

Ingredients for Glaze:

  • 1 cup powdered sugar, sifted

  • 1 tsp. ground spices (recommended: Malai Chai Masala)

  • 1/4 cup heavy cream

  • 1/4 tsp. salt

Directions:

  1. Preheat oven to 350 degrees. Coat a loaf pan with cooking spray.

  2. In a bowl, whisk together sugar and coconut oil until well incorporated. Add melted ice cream and stir to combine. Mix in flour, baking powder and salt, and fold with a rubber spatula until the dry ingredients are fully incorporated into the wet ingredients

  3. Pour into prepared pan and bake for 35 minutes or until a tester comes out clean. Let cool completely on a wire rack.

  4. In the meantime, make the glaze by mixing all of the ingredients together. When cake has cooled, pour glaze on top. Let it sit for 15 minutes until the glaze has hardened. Slice and serve.
