Parle-G Masala Chai Ice Cream Sandwich

Is there anything more iconic than a crisp Parle-G being dunked into a steaming hot cup of masala chai? No, is the answer. We take this classic and turn it up a notch using our Masala Chai ice cream, and say it with me: Parle-G-Cookie-Butter. You heard right! Malai offers these Parle-G Masala Chai Ice Cream Sandwiches every Diwali, but with this recipe, you can have this special treat any time of year!

Makes: 18 sandwiches 

Ingredients:

  • 1 11.93 oz pack of Parle-G biscuits

  • 2 tbsp. Coconut oil

  • 2 tbsp. Heavy cream, as needed

  • ½ tsp. Salt

  • 1 pint Malai Masala Chai ice cream

Instructions:

To make cookie butter: take 3 sleeves of biscuits from the Parle-G pack. Grind the cookies in a food processor until they are fine crumbs. Add the coconut oil, salt and 1 tbsp. Heavy cream. Keep blending for another 2 minutes. Add more cream to reach desired consistency of the cookie butter. It should be spreadable, like a nut butter. Set aside.

Line a quarter sheet tray with parchment paper. Scoop out all of the Masala Chai ice cream and spread on to the baking sheet. If using a quarter sheet tray, spread the ice cream to the edges and place in the freezer for about an hour.

Lay half of the remaining biscuits on a sheet tray, facing up. Spread about a teaspoon of the cookie butter on to each of the biscuits. Place the baking sheet in the freezer.

Remove the ice cream from the freezer, and using the biscuits as a measurement guide, score the ice cream to the size of the biscuits. If the ice cream becomes too soft, stick it back in the freezer. If not, take the other sheet tray out of the freezer, and place a piece of ice cream directly on the biscuit with the cookie butter on top. Top with the remaining biscuits. Place back in the freezer for another hour. Take out and enjoy!
