About the Taiwanese Ice Cream Roll

This quintessential Taiwanese night market dessert is equally popular amongst locals and visitors. Both having familial roots from Taiwan, Moonlynn Tsai and Yin Chang grew up enjoying the Taiwanese Ice Cream Roll during their school-holiday visits to Taiwan. The flour-based wraps are traditionally assembled with scoops of ice cream over a layer of peanut brittle shavings and generously topped off with a handful of cilantro for a robust depth of flavor. The wrap is then rolled into a shape that is similar to that of a burrito, and placed in a to-go bag for the guest to enjoy as they stroll through the rest of the night market.

For Malai’s Summer Guest Chef Series, we’re thrilled to share this beloved dessert with our favorite Malai ice cream flavors that will beautifully tie all the ingredients together: peanut brittle shavings, then topped with a scoop of Malai’s Mango & Cream, a scoop of Malai’s Carrot Halwa, and a sprinkle of cilantro. You can count on hearty, full-bodied flavors and texture with each bite.

Ingredients:  

  • PeanutBrittle

  • Cilantro

  • Eggless Spring Roll Wrapper

  • Malai Mango & Cream

  • Malai Carrot Halwa

  • Malai Lychee Sorbet (for vegan option)

Recipe Serves: 12

Peanut Brittle

  • 450 grams/ 16oz raw peanuts

  • 250/9 oz grams sugar

  • Oil for brushing

Spring Roll Wrapper

  • 1 cups all purpose flour

  • ½ tsp salt

  • 1 ½ cups water

Peanut Brittle

  1. Use a flat pan over medium heat to dry roast the peanuts for about 10 minutes.

  2. Allow the nuts to cool completely. If using pre-roasted nuts, you may skip this step.

  3. Brush the surface of your cutting board and rolling pin with a very light layer of oil to prevent sticking when you pour the brittle on it later.

  4. Using the same pan from earlier, melt the sugar by stirring constantly over medium low heat. It will take about 5 minutes to melt the sugar completely. Add the peanuts to the melted sugar and mix well.

  5. Quickly pour the hot peanut and sugar mixture onto the greased, flat surface of your cutting board and immediately roll it out to about 1/3-inch thick. Cut into desired size and shape.

  6. Traditionally, the shavings made by scraping the brittle block with a sharp tool. Option is to break it apart by hand and blend in a blender to create the powder.

Spring Roll Wrapper

  1. Add the all purpose flour and salt to a large mixing bowl. Add water to make a thin batter

  2. Heat a flat pan over medium heat. Grease with oil. Pour about ⅓ cup of batter to the pan

  3. Swirl the batter around to spread evenly. Cook until the wrapper is done and the edges curl up, transfer to a plate and let it cool completely. If you’re not going to use it right away, cover with damp cloth.

Assembly

  1. Lay one of the wrappers on a flat surface, add layer of peanut shaving, Add preferred amount of cilantro on top of peanut brittle shaving

  2. Add 1 scoop each of the Malai’s Mango & Cream and Carrot Halwa ice cream on top

  3. Fold the two horizontal sides in, then bring the bottom of the wrapper towards the center and roll
